The only way I know of to do this (which, of course, means there's
probably some other way that I don't know about), is to install a
VGA frame grabber on the system and then feed its output to
another computer, which can then capture the frame. Virtual
machine setups will capture *a* BIOS screen, but it won't
necessarily be the real one (because it'll be a virtual BIOS).
