My concerns with your approach are that I'm not sure whether you'll be
able to reliably spellcheck the words in the equation editor, search
for them, or export them easily to other formats (e.g., HTML). Why not
try something simpler and more portable? Create a table with the same
number of rows and columns, select the center cells that contain the
options and apply your choice of cell borders, then create a style
called "default option" that you can apply to the desired option text.
