The "Find what?" string is ^d with the caret (^) being the character over
the 6 on your keyboard. You can find many (not all) of these secret codes
simply by clicking the More button in the F&R dialog, then clicking the
Special button and picking the desired critter from the list. Once you
select it, Word will enter its code equivalent into the Find field. Jot down
any ones you'll use regularly--they're awfully useful.
To actually see what you've found, you'll need to first turn on the display
of fields: Open the Tools menu, select Options, click the View tab, then
select the checkbox for Fields. Now do your Find operation. Once you've
found the first field, close the Find dialog. From now on, until you search
for something new, all you need to do to find the next field is press
Control-PageDown. Knowing that shortcut will save you hours of mousing.

I don't know that you can replace the field globally and automatically (I
believe you can copy something to the clipboard and use ^c as the "replace
with what" code to paste the contents of the clipboard into the document),
but in case you can't, here's a simple workaround: insert the correct field
to replace the bad one, then copy that field to the clipboard. Each time you
press Control-PageDown, Word will skip ahead to the next field and highlight
it. If it's one of the bad fields, simply paste the copied field into the
document to replace it; if not, hit PageDown again to move to the next
field.
