I have had to do that for our sister company. I made the first templates and told the person who asked me do make them that I would show her how to do it herself. Now, I just stay available for support.

I would rather become the xml expert then the template girl. Especially since I am not an expert with Word (I try to stay away from that tool).

Usually, if you apply yourself and be a good teacher, you can find someone who will be happy doing the tasks that stand between you and what you would really like to do. Moreover, some people might thank you for sharing your knowledge.
