I've used tape recorders (a boombox on the table between us), and one time
a video camera when there was extensive whiteboarding. I prefer audio
tapes - I found video to be more of a hassle to transcribe, what with all
the pausing, rewinding, etc.

Surprisingly, I've never had problems with SMEs being uncomfortable with
this. Instead, I think it showed how much I valued their time, by being
willing to create recordings I could refer to without troubling them
repeatedly over the same issue.
