I would guess that you just need to track the amount of work it takes per manual. Look into the many documentation time estimation posts in the archives. In addition, start tracking the amount of hours you take per task.

You can do two things with this information. One is to help you organize and become more efficient in the work. That will endear you to your managers. The other is to ask them for more help or to limit some of your scope. You will want to give them that choice, because they may not have the budget to hire another writer. If you are going to ask them to either expend budget or decrease your scope, you need to have hard data *from your environment* to back it up.
