I want to describe the updateability of a data model. The idea is that
the data is not static, but dynamic. Some factors can affect the
updateability, e.g. multiuser, locks, dependencies, etc.

"Updateability" returns 589 on Google.

Does anyone have a better suggestion?

I'd try to avoid the word. How about:
"The data model can be updated."
"The data model updates itself when ..."
"As long as the database is locked, the data model cannot be updated."
etc.
