Ruth,

"Design" in the book trade encompasses both esthetics and economics. If you are designing a high-price coffee table cookbook with one recipe per quarto spread, you have the luxury of being able to incorporate numbered lists, tables, and all the white space you wish.

If you are designing a $9.95 paperback with 2,500 recipes, you may be stuck with list-plus-paragraph style.

So the first consideration of any book designer is figuring out how much information you have to get onto a page and how much you can spend (in composition costs) to put it there. Within those constraints, however, creative problem-solving is encouraged ;-)
