For the field shading, wouldn't it be Tools>Options>View>Field Shading=Never?

Or are we talking about two different things here?

You can edit the properties of each style in the TOC the same way you edit
the properties of other styles: via the Format-->Style menu (better, because
the changes are permanent until you update the style), or manually (which
will be lost when you regenerate the TOC).
