In my portfolio, I have a Table of Contents from a small API that I wrote, showing the layout and sections of a typical API. I then documented a single instance of a database call: "AddNewThingy". Again, it showed that I was aware of the various elements of a database.

If you want some good generic ideas of what to show, get Gordon and Gordon's book (it is advertised in this week's Tech newsletter). I purchased the book a year ago, and it helped me a lot.
