I'm not positive it will fill your need, but when I got FM6+SGML a pdf doc named "Adobe FrameMaker+SGML Development Guide" was included on the install CD. It does give a thorough guide to building an EDD and explaining the rules.
One thing I did notice was that writing the read/write rules in the EDD bore a strong resemblence to writing a good regular expression in Perl or other *nix tools. If you think of your EDD's rules as regular expressions, they are much easier to write.
BTW - I still prefer DocBook 4.1, Jade, and Emacs, but we've already hashed out that discussion recently ;)

Does anyone know of a web tutorial with a sample DTD and sample XML file
that walks you through building the EDD, and read write rules for Frame 7.0?
Actually any REAL examples would be great. The Adobe documentation deals
more with description of theory than walking through examples that go from
simple to more complex. Maybe their goal is to sell training instead of
clearly explain how to use the product.
