I.M.H.O. your first example makes an awful long sentence, so the second
would be better. However, I would write it as:
"Our team's range of expertise includes production, assembly, food
processing, distribution, and transportation.'
whether you want to add emphasis by adding a dash, or colon, after
'includes', is up to you.
