Some 98% of what I've done is proprietary, classified, or both. I used to use the "show a generic version but don't leave it" method for the nonclassified stuff, but I was never comfortable with that.

What's worked for me is to have samples written specifically for the portfolio. So far, every interviewer has been understanding when I say, "I can't show you the manual I wrote for that product. To show you the type of work I did, I wrote a sample manual for [insert name of similar shareware or widely-used application.] Please take particular note of..."

The extra work it took to write them has been more than rewarded with the work I get because of them. Interviewers seem much happier when they have samples to show their chain of command - and I'm convinced I have my current job because I attached samples to the resume I gave out at a job fair.
