Fall into "uh-oh I should be working" mode and spend a lot of time reading novels, boogie boarding, and hiking until I realize if I don't make myself work more I'm going to miss a deadline, at which point I switch back into workaholic mode.

As a freelancer I seldom remember that it's not only OK, it's actually necessary to take time away from work (some people get two whole days off every week! who knew?). I've found that scheduling time off doesn't work very well for me, as something always comes up, but sneaking an afternoon or a week here and there always seems to refresh and re-motivate me.

So does taking on a new gig that has a beginning, middle, and end and a short turnaround. I tend to lean toward magazine feature projects at that point, and sometimes I just bake cookies.
