when you are referring to a step that "undoes" encryption:
- Decrypting
- Unencrypting
- De-encrypting"
Since the applied technology is cryptography, when we want to obscure plain text we _encrypt_ it. When we want to change that encrypted text back to plain text we _decrypt_ it. Your other two choices apply two conflicting prefixes to the root of the word.
