What exactly do you learn in an Information Architecture class if it's all
theory?

It seems to me that such a class could have a lot of concrete examples and
real world applications.

At any rate, if you are learning how to look at a bunch of separate pieces
of information and the theory teaches you how to look at it all as a whole
so you know how to edit it into a useful guide, book, or collection of web
pages -- i'd say that's a pretty good thing. That's a perfect base for
tech writing, IMO.
