In no order, except the one I thought of them in:

- The differences between file formats, especially between raster and vector graphics, and compression systems (jpg vs. gif vs. tiff, etc.).
- The use of <alt> tags and related accessibility issues when using graphics for online documents. Visual harmony would also cover some of this in making sure that the colors do not cause readability problems.
- When discussing cropping, the difference between cropping in a photo editing program and Word (which only hides the "cropped" portion and retains the full byte count in the file size).
- An overview of the most common graphics applications, telling what each does and does not do.
- The advantages of working in layers.
- CMYK vs. RGB.
- Resolutions (72 dpi for online, higher for print).
- Copyright awareness (many beginners start "borrowing" pictures from the net with no thought of the legalities).
- Using filters.
- How to do screen captures.
- Resizing raster images properly.
