Thanks to everyone who took the time to reply to my question. I also
polled some of our users. The consensus is two-fold:

- remove the documentation for the obsolete functionality, even though
the functionality still exists in the software
- include a note pointing to the documentation for the newer
functionality in a related product

I'll use a note something like the following:

Note: The XXX functionality, although still available within the YYY
product, is no longer supported. This functionality has now been
enhanced and replaced by ZZZ. For more information, see ...
