Well, as you suspect, you should take some kind of technical writing
course.  Myself, I went through the graduate program at Drexel
University in Philadelphia.  Knowing all the tools like Word and FM and
RoboHELP is certainly an asset, but you gotta know what constitutes good
documentation.
