I can't comment on using .avi vs. something else, but I would like to make an
accessibility pitch, if I may.

If you do use some sort of video to explain procedures, which sounds like an
interesting way to get the message out, be sure to include some sort of
alternative for those who are visually challenged and would not be able to
follow a video only presentation of procedures. Too often we get caught up in
technologically elegant presentations that all of our reader/users can't access
for one reason or another.
