That's a good approach. I take it one step farther because I type so fast: I
give the SME either an outline we've developed together or one that I've
cobbled together and ask him to tell me about things. Then I type from
dictation, as nearly as possible. If you are a reasonably fast typist you can
keep up with the person doing the talking, provided you ask them to explain
things every now and then. You don't have to record every word, and since
you're the writer you get to edit on the fly.

The process requires that you pass versions back and forth fairly often, but
you'll probably get a pretty good document out of it.
