I thought it was simply a matter of US people spelling it 'dialog' and UK
people spelling it 'dialogue', I had never heard of a 'programmers' way of
spelling something.

You are correct. Only us unlettered, barbarian, rude, socially unacceptable colonials in Yankland spell it dialog. The rest of the English speaking world uses the other spelling.
